1 2lbbag of small/medium lemons or 4-5 large lemons
Zest the lemons over a bowl with your microplane. Be sure you do not get any white part of the lemon.
Pour some of the Everclear out of the bottle into a cup. With your fingers add the lemon zest back into the Everclear bottle making sure you get all of the lemon zest. Put the lid back on the bottle and turn the bottle over (do not shake it) to run the lemon zest through the alcohol. Do this everyday for the next 1 ½ weeks.
After 1 ½ weeks, the Everclear should be a pale yellow. In a medium sauce pan, boil 2 cups of water. When the water is boiling then add 2 cups of granulated sugar and stir until it dissolves. Remove it from the heat and let it cool. This is your simple syrup.
Strain the Everclear by pouring the contents into a small holed strainer over a pitcher so that you do not get any zest into your final bottle. (If you empty the bottle VERY slowly into the pitcher the zest should stay at the bottom but to be safe I would empty it over a small holed strainer.) The remaining zest at the bottom of the bottle should be thrown into the garbage. Rinse out your empty bottle.
To ensure that there are no particles left, you will then need to put a paper coffee filter into your small holed strainer and pour the lemony Everclear contents through it again into a bowl. It takes a little while to do this. After complete, pour the Everclear into a pitcher.
Add half of your simple syrup to the lemony Everclear and taste it. It's easier to add simple syrup than take it away. If you feel like it's not sweet enough then you can add more and more. If you run out of simple syrup and you still feel like it's not sweet enough then make some more simple syrup and slowly add it.
Once you get the right ratio of sweetness then you need to start pouring the contents back into bottles. Understand that you have added about 4 more cups of liquid to that Everclear so it's not all going to fit into 1 bottle. With your funnel add the lemoncello into the bottles that you have and place the full bottles into the freezer. It won't freeze but it will meld together nicely and you will notice it gets cloudy.
