
Warm Steak, Bacon and Potato Salad
Ingredients
- 1 lb small red-skin potatoes or 2 medium sweet potatoes
- 3 strips bacon
- 1 small onion chopped
- 1 pound boneless beef sirloin cut into strips
- ¼ tsp of salt
- 5 tablespoons honey
- 5 tablespoons cider vinegar
- ½ teaspoon cornstarch mixed with ½ teaspoon cold water
- 1 bag 6 ounces baby spinach leaves
- 1 cup grape tomatoes halved
Instructions
- Cover the potatoes in a medium size sauce pan and cover with cold water. Bring to a boil. Simmer for 15-20 minutes or until tender. (If you decide to use sweet potatoes, peel them, cut them into small chunks and boil them in water for the same amount of time.
- While the potatoes are cooking, in a large skillet, cook bacon until crisp. Transfer the bacon to a plate lined with a paper towel. In the bacon drippings, add the chopped onion and cook for 3 minutes. Add the steak and salt, cook 2 minutes longer or until steak is no longer pink but not too over done. Transfer steak and onions to a plate and keep warm.
- Add honey and vinegar to skillet; cook over medium heat for 2 minutes. Add cornstarch-water mixture; cook for 30 seconds then remove from the heat.
- Drain the potatoes; run cold water over the potatoes to cool them off. Cut the potatoes into quarters and place in a large mixing bowl, add the steak and onion, crumble the bacon and add that to the bowl as well as the adding the spinach. Pour the honey-vinegar warm dressing over the ingredients in the bowl, toss to coat then add the tomatoes.
I know you are probably thinking, "wait, I thought you were going more high protein and this has potatoes in it?" This Warm Steak, Bacon and Potato Salad is something that I have made numerous times for my kids in the past. I am still doing reading and research on this new lifestyle that I am starting so rather than just being completely quiet during this time I thought you might enjoy this recipe!
This is a quick meal that can be made for a family or you could cut it in half and make it for just a couple of people! I love steak, bacon and wilted spinach! This is a warm steak and has it's own dressing so to speak. It is also clean eating!
I think one thing I would change is making it with a sweet potato which would definitely add more protein and I think it would taste amazing!
Another thing I love about this dish is that you can make it when it's cold outside or even when it's a hot summer day! I can imagine you could even grill the steak for the salad too. I haven't tried that yet.
