
Grilled Chicken, Bacon, Asparagus and Avocado Salad
Ingredients
- 6 slices bacon
- 1 bunch of small asparagus about 20 in a bunch
- 1 tablespoon olive oil
- Lemon pepper seasoning to taste
- 2 cups lettuce or baby spinach
- 8 ounces chicken breast approximately 5
- 1 large ripe avocado
- Trader Joe's rice vinegar
Instructions
- Fry the bacon, drain and break it up into pieces. Set it aside.
- While you are cooking the bacon, start the barbecue to a warm/hot temp.
- On a plate, spread the asparagus, drizzle a little bit of olive oil over the asparagus and sprinkle with the lemon pepper. Set the asparagus on the grill opposite direction of the grill so the asparagus doesn't fall through. Grill for 3 minutes, check, move the asparagus around and check for another 3 minutes. It should be a little firm but not too soft.
- Pound the chicken breasts, evening them out. Lay them on a plate, sprinkle with salt, pepper, and whatever seasoning you would like (I used Emeril's Essence) on both sides. Place them on the grill, cook for 3-4 minutes per side. Remove from the grill and let it rest for a few minutes. Slice into thin strips.
- Peel and slice the avocado and set it aside.
- Place lettuce in the bottom of the plates, just covering it. Place the chicken slices on top, followed by the grilled asparagus, chopped bacon and slices of avocado.
- Top with rice vinegar or any other salad dressing/vinaigrette that you like!
When I first started this blog it was because I was having to type recipes anyway because I am wanting to put together a cook book of family recipes for my adult children. I have noticed that I am taking detours with some of the cooking. I won't lie that back when the kids were little it was more about ease and quickness versus healthy. I have put on a few pounds during the summer months and I have a friend that is doing healthy cooking. It has made me evaluate how me and my man are eating and how we could be making some changes so we eat healthier and clean. After doing the grilled chicken from the previous post I saw this recipe and just wanted to try it! The Five Spice Grilled Coconut Chicken would be great in this recipe! We have fresh lettuce growing in our garden that I used in this recipe. Overall, it is clean, healthy and very nutritious and good! I mean look at this picture! The chicken was barbecued on the grill. It was just seasoned with some salt and pepper and some Emeril Essence. The chicken was moist and seasoned perfectly! The best thing was it only took 10 minutes total to cook!!
