
Almond Dark Chocolate Chip Flour Muffins
Ingredients
- 3 cups almond meal
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¼ cup melted coconut oil melt the coconut oil first then measure the correct amount
- ½ cup organic maple syrup
- 3 large eggs
- 2 teaspoons vanilla extract
- ¼ teaspoon almond extract
- ½ cup dark chocolate chips
Instructions
- Preheat the oven to 350 degrees. Line a 12 cup muffin pan with baking cups and set aside.
- In a large bowl, whisk together the almond meal, baking soda and salt. Set aside.
- In a medium bowl, whisk together the melted coconut oil, maple syrup, eggs, vanilla extract and almond extract. Add these ingredients to the bowl with the dry ingredients and mix until combined. Stir in the dark chocolate chips.
- Scoop the batter evenly into the prepared cupcake tins. Bake for 22-25 minutes, until golden brown and a toothpick comes out clean.
- Let the muffins cool in the pan for about 5 minutes, then remove to a wire rack to cool completely.
As I put in my last post there are food lifestyle changes coming and these Almond Meal Dark Chocolate Chip Muffins are my first clean eating baking en-devour. After reviewing different lifestyle changes (let's face it they are really diets) I feel that a good lifestyle for Pete and I would be low carb, high protein and clean eating. It would help us to get back on track. For me high protein is essential in my lifestyle and Pete has had success in the past with that type of eating.
My mother does not like anything healthy. As a matter of fact, when I make stuff she is always asking me "These aren't "healthy" are they?" and wondering what kind of flour I used. This time I had her try them first before I told her. She said, "oh my gosh these are good!! Wait..what are these?" I laughed and told her that there is almond meal in them, no regular flour and only natural sugar. They taste a little like a coconut macaroon with chocolate and she agreed! They are SO GOOD! You cannot go wrong with this recipe!

These look awesome. I've never cooked with almond meal, but it's good to see that the muffins stay together and look like they have an awesome texture.
It's funny, my mom is the opposite of your mom. If I give her anything to eat that I've baked she says "what's in there?why would you use white flour, it's not good for you!" or "wait... what's in here? is there butter in here?"

Aw thanks Kate!! They really are SUPER good!! The original recipe called for almond flour but Trader Joe's sells almond meal which (from my research) is just as good! They would be low carb too if they didn't have the dark chocolate chips but they ADD something you know?
